The Art of Slow-Brewed Masala Chai

Unlocking the aromatic medicinal harmony of whole crushed cardamom, fresh ginger root, and Assam tea on cold, misty days.

Steaming pot of authentic spiced masala chai

Few beverages evoke immediate grounding as profoundly as homemade masala chai simmered over an open flame. While instant teas offer speed, the ritual of cracking whole spices in a heavy mortar and pestle fills your kitchen with intoxicating warmth long before the first sip.

The Spice Chemistry

To brew authentic chai, avoid pre-ground powders which quickly oxidize and lose essential oils. Lightly crush four green cardamom pods, two black peppercorns, one small cinnamon stick, and a quarter inch of freshly grated ginger root. The peppercorns provide a subtle throat heat that complements cold rain outside.

Decoction & Milk Aeration

Simmer spices in one cup of filtered water for five minutes to extract their essential oils. Add two rounded teaspoons of strong CTC Assam black tea, then pour in one cup of whole milk or creamy oat milk. Bring to a gentle boil, reduce heat, and repeat three times to allow the milk sugars to caramelize slightly.
